Wellness Wednesday: Nutritious Tailgate Food

Football season is here, and so is tailgate food!

You don’t have to skip your game-day favorites to make your plate a little more nutritious. Marshall Health Network - St. Mary's Medical Center Registered Dietitian Sydney Adams is sharing simple swaps to add more protein, fiber, fruits and veggies while keeping all the flavor.

Check out this Black Bean Salad for a fresh and flavorful addition to your next tailgate!

Ingredients:
  • 7.25 oz canned Dark Red Kidney beans strained
  • 7.25 oz canned Black Beans strained
  • 1/2 cup canned or frozen (dethawed) corn
  • 1/2 cup chopped onion
  • 1 green bell pepper chopped
  • 1/2 chopped English cucumber
  • 1/2 lemon juiced
  • 1-2 teaspoon each salt, pepper, parsley and garlic
  • 1/4 cup olive oil
  • 1/8 cup red wine vinegar
Directions:

Mix all ingredients in a dish with a lid. Let sit in refrigerator at least 1 hour. Serve with chips, crackers, as a side, on top of a salad or by itself.
